Home Baking: Cookie Pie

I spotted this recipe whilst multitasking this morning; browsing the internet for inspiration and decorations for a friends wedding whilst catching up with another friend on the phone. I was stopped in my tracks by the image above and could only manage to mutter ‘yum’ at my confused friend before hanging up.
I am rushing this post slightly so that I can make it to the supermarket before lunchtime closing and get cookie pie baking this afternoon.
Happy Sunday!

* If using frozen pie shell, use deep dish style and thaw completely. Bake on baking sheet and increase baking time slightly.
